Tasting note: According to family tradition, the ancestors of the Geönczeöl family who came from Kynceľove Kračany (Göncölkarcsa in Hungarian) in Žitný ostrov used the prefix of Karcsay before their name. This is an ancient Hungarian word meaning a public law function. This is the winery’s flagship wine which is only produced in the best vintages. We wanted to produce a great white wine that combines every winemaking finesse: low yields, organic production, very ripe grapes, fermentation on the skins, oak and bottle ageing, ageing on the fine lees and blending.

Winemaking: Classic blend, fermented in oak, aged on the fine lees. The Leányka and the Zölveltelini were produced from very ripe grapes, macerated on the skins for 24 hours and then spontaneously fermented. The Olaszrizling spent 15 days on the skins and was produced from late harvested, partly botrytised, shrivelled grapes. The three wines were aged separately for three months and then blended; the blend then spent a further eight months in oak. After bottling, the wine was aged for another half year in the cellar before release.

Food pairing: Roast meat, mushroom dishes, mature cheese, including blue cheese.
