Tasting note: This wine made from very ripe Pinot Noir grapes is a characteristically cherry-red colour with amber-brown flecks. After opening, it is worth decanting or at least aerating for an hour or so, as it will then begin to open properly. Earth and dried fruit on the nose with a note of leathery “barnyard”. Full and round on the palate with flavours of plum and sour cherry liqueur, a slight sensation of sweetness and more pronounced tannins than usual for the variety.

Winemaking: Made from very ripe grapes, it spent 21 days fermenting on the skins before being transferred to 10-15-year old small oak barrels. Malolactic fermentation took place on the skins. It was aged for 15 months in oak before bottling and then spent a further six months in bottle before release.

Food pairing: Beef or game with gravy, mature cheese, quality cigars.
