Tasting note: Pale golden colour. Honey and raison aromas as well as a note of varietally characteristic petrol in the background. A medium-bodied wine recommended for lovers of more austere wines due to its lively but harmonious acidity.
Winemaking: A blend of three wines from one vintage: one part normal “reductive” wine, one part macerated on the skins for 48 hours and one part late-harvest wine (November). All three undergo spontaneous fermentation.
Food pairing: Recommended primarily with cheese, oily seeds, walnuts, light roast meat, but would also work with pasta dishes with sour cream and curd cheese.
Recommended serving temperature: 10-12ᵒC
